Directions

  1. Set an oven, or preferably a smoker, to low or about 200° degrees. Soak 2-3 cups of woodchips (hickory, apple, cherry, etc.) in water for about an hour. If using a smoker there will be a spot to load wood chips. If using an oven then remove 1 cup of chips from the water and place into a small skillet over a low flame. Heat the wood chips until they begin to smoke and turn black.

  2. Line a sheet pan with aluminum foil and place a rack on top. Over the rack rub the brisket with BBQ Seasoning on both sides; use all the spice and more if the brisket is not covered.

  3. Place the meat on the sheet pan with the fat side up in the center rack of the oven. As the wood chips smoke place the pan in the oven. This step will need to be done repeatedly throughout the cooking process. Keep more wood chips on the stovetop in a different pan so that the smoking can be as continuous as possible.

  4. Cook for 6-8 hours or until the brisket is fork tender. Remove as much of the fat cap as desired before slicing.
