2 Pounds Eye Of Round Roast, trimmed and tied

1/4 Cup Dijon Mustard

1 Tablespoon Dill Weed

1 Tablespoon Onion Salt

1 Tablespoon Ground Black Peppercorns Dustless
Directions

Preheat oven to 375°F.

Mix mustard, dill weed, onion salt and ground black pepper in small bowl. Place roast on rack on roasting pan covered with aluminum foil. Rub mustard mixture all over beef.

Transfer roasting pan to oven and cook for 30 minutes. Turn oven down to 225°F and cook for another 60 to 80 minutes, until medium-rare or medium, depending on preference. Let meat rest for 15 minutes before cutting.
