Oatmeal Raisin Cookies

Makes 3 to 4 dozen

Directions

  1. Position racks in upper and lower thirds of oven, and preheat to 350°F. Line two baking sheets with parchment paper.

  2. Combine oats, flour, cinnamon, baking soda, salt and nutmeg in large mixing bowl, and whisk to combine.

  3. Combine butter and sugars in bowl of stand mixer fitted with paddle attachment, or use large mixing bowl and hand mixer. Beat together until smooth and fluffy.

  4. With mixer running, add eggs, one at a time, beating for 1 minute after each addition. Add vanilla. Reduce speed to low, and slowly add dry mixture in 2 to 3 additions. Beat just until incorporated. Fold in raisins.

  5. Drop heaping tablespoonfuls of dough onto prepared baking sheets 2 inches apart.

  6. Transfer sheets to oven and bake 12 to 15 minutes, rotating sheets once after 7 minutes.

  7. Cool on cooling racks until firm.
