1/2 Cup Unsalted Butter, softened

1/2 Cup Light Brown Sugar, packed

Preheat oven to 350ºF. Line baking sheet with parchment paper.

Beat butter, brown sugar and white sugar in large bowl until smooth. Beat in egg and vanilla until light and fluffy.

Combine flour, baking soda and salt in separate bowl. Gradually add dry ingredients into wet mixture until fully incorporated. Fold in coconut and diced kiwi slices until evenly mixed.
