When cooked with a bit of extra water and then mashed, our Millet Seed takes on a consistency similar to mashed potatoes. This Black Mustard Seed dotted recipe adds a mashed potato for extra body, but you can easily substitute it for cauliflower or simply omit it altogether.

Mashed Curried Millet

  1. Rinse millet seed 2 to 4 times under running water, until water runs clear. Transfer to medium saucepan, and add 3 cups water. Bring to a boil over medium heat, reduce heat to low, cover and simmer for 30 minutes. Remove from heat.

  2. Heat canola oil in frying pan, and add mustard seeds, toasting until they pop. Remove seeds from heat and add to millet, along with mashed potato and spices. Mix well, mashing with potato masher or large fork until desired texture is achieved. Season to taste with salt.

  3. Place small amount of oil in medium-size frying pan, and add millet-potato mixture to pan.

  4. Fry briefly, stirring often, until spices become aromatic.
