Thai Wheat Berry and Carrot Salad

Ingredients

Makes 6 servings

  • 1 Tablespoon Smooth Peanut Butter

  • 1/4 Cup Water

  • 2 Teaspoons Soy Sauce

  • 2 Tablespoons Hoisin Sauce

  • 1 Tablespoon Fresh Ginger, minced

  • 1/2 Teaspoon Garlic, minced

  • 2 Teaspoons White Sugar

  • 2 Teaspoons De-Stemmed Thai Chiles, crushed

  • 1 1/2 Cups Soft White Wheat Berries, cooked

  • 1/4 Cup Carrots, diced

  • 1/4 Cup Green Onions, sliced

  • 1/4 Cup Green Peppers, sliced

  • Black Sesame Seeds, for garnish

Directions

  1. Whisk together peanut butter, water, soy sauce, hoisin, ginger, garlic, sugar and chile flakes in large bowl until smooth and sugar has dissolved.

  2. Add remaining ingredients and toss until evenly coated.

  3. Refrigerate overnight, then serve garnished with black sesame seeds.
