This hearty cake makes use of our versatile Millet Flour, which has a slightly sweet flavor that works well in baked goods. Although millet flour tends to impart a slightly crumbly texture, the addition of applesauce in this recipe leaves the cake moist and tender.

2 Cups All-Purpose Flour

1 Cup Millet Flour

1 Cup Granulated Brown Sugar

1 Tablespoon Organic Ground Cinnamon

1 1/2 Teaspoons Baking Soda

1 Teaspoon Baking Powder

1/2 Teaspoon Kosher Sea Salt Flakes

1/4 Teaspoon Ground Cloves

1/4 Teaspoon Ground Nutmeg

4 Eggs
-
1 Cup Unsweetened Smooth Applesauce

3/4 Cup Vegetable Oil

2 Teaspoons Vanilla Extract, Bourbon Madagascar, divided

3 Cups Mashed Overripe Bananas

8 Ounces Cream Cheese, room temperature

1/4 Cup Butter, room temperature

4 Cups Powdered Sugar
Directions

Preheat oven to 350°F, and grease 13-inch by 9-inch pan.

Add flours, sugars, cinnamon, baking soda, baking powder, salt, cloves and nutmeg in large mixing bowl and whisk to combine. Beat eggs, applesauce, oil and 1 teaspoon vanilla extract in separate bowl until smooth. Fold egg mixture into flour mixture. Mix in mashed bananas.

Pour batter into pan, transfer to oven and bake until tester inserted into center of cake comes out clean, about 45 to 55 minutes.

Cool in pan on wire rack. Allow cake to cool completely before frosting.

To prepare frosting, beat cream cheese and butter in large bowl until fluffy. Add powdered sugar, 1 teaspoon vanilla extract and beat until smooth. Spread over cake.
