1 1/2 Pounds Red Potatoes, thinly sliced

1/4 Cup Mayonnaise

1/4 Cup Low-Fat Yogurt

1 Lime, zest and juice

1 Teaspoon Kosher Sea Salt Flakes

1 Scallion, green parts only, thinly sliced

1/2 Cup Fresh Mint Leaves, chopped

1 Cup Fried Green Peas
Directions

Place potatoes in large pot and cover with water by 1 inch. Bring to a boil over high heat, reduce heat to a simmer and cook until potatoes are tender, about 5 minutes. Drain potatoes in colander and let cool to room temperature.

Mix together mayonnaise, yogurt, lime zest, lime juice, salt, pinch of black pepper, scallion and mint in large bowl.

Add potatoes to yogurt mixture and stir gently until evenly coated. Taste and season with more salt, if necessary. Sprinkle with Fried Green Peas.
