Twice Baked Potatoes

Ingredients

Makes 4 servings

  • 2 Medium Baking Potatoes

  • 2 Teaspoons Salt

  • 1 Teaspoon Ground Black Peppercorns Dustless

  • 2 Tablespoons Butter

  • 1/2 Cup Whole Milk

  • 1/2 Cup Shredded Cheddar Cheese, divided

  • 2 Tablespoons Chive Flakes

  • 4 Slices Bacon, cooked, crumbled

Directions

  1. Preheat oven to 375°F.

  2. Scrub potatoes by hand under cold running water. Place on sheet pan, transfer to oven and bake for 1 hour or until knife slides easily into potato.

  3. Slice potatoes in half. Gently scoop out insides of potatoes and place in medium bowl, being careful not to break potato skins.

  4. Add salt, ground black pepper and butter to bowl, and mash potatoes with fork or potato masher. Add milk, 1/4 cup cheese, chive flakes and bacon, and stir potatoes just until milk is absorbed. Cheese should be visible.

  5. Fill empty potato skins with mashed potato mixture, pressing down into potato skins if needed to use all mixture.

  6. Arrange potatoes back on sheet pan and bake in oven for 15 minutes. Top with remaining cheese, and bake for 5 minutes more. Serve.
