Freeze Dried Peas
Freeze-Dried Green Peas are green peas that have been dehydrated by freezing and then driving the frozen water out of the peas in gas form through lowered surrounding pressure. They are about 1/4 inch in diameter and have a pale green outer skin surrounding a bright green interior.

Basic prep
Ready to eat. No preparation necessary. To rehydrate Freeze-Dried Green Peas, place one cup of peas in a bowl and cover with 3 cups hot water. Let soak for 20 to 30 minutes, then drain.
Storage & handling
Store in a dry, cool place.

Freeze-Dried Green Peas (Pisum sativum) are green peas that have been dehydrated by freezing and then driving the frozen water out of the peas in gas form through lowered surrounding pressure. This process allows them to retain all the integrity of the fresh pea-sweet taste, vibrant green color and nutritional content-but imparts a crunchy texture. Great on their own or as part of a healthy snack mix, they may also be rehydrated and prepared just like fresh green peas. When kept in an airtight container, Freeze-Dried Green Peas will last for several years on the shelf.

Peas are a member of the legume family. The history of dried peas reaches back at least 5,000 years. Scientists believe that they originated in southwestern Asia, perhaps in northwestern India, Pakistan, Afghanistan or adjacent areas. However, they soon spread to the Mediterranean region, then throughout Europe and soon to the New World. The common garden pea we know today was developed in England, but Canada is currently the world's largest exporter of peas.
