2 Cups Freeze Dried Peas

6 Cups Boiling Water

2 Tablespoons Unsalted Butter

1/4 Cup Fresh Mint, chopped

1 Teaspoon Lemon Juice, freshly squeezed
Directions

Place Freeze-Dried Peas in large bowl, and cover with boiling water. Soak 20 to 30 minutes, until fully rehydrated. Drain.

Melt butter in saucepan over medium heat. Add peas, and cook, stirring occasionally, 5 to 10 minutes.

Mash peas with fork to achieve desired consistency (traditionally mushy peas have some lumps). Stir in chopped mint and lemon juice, and season to taste with salt and black pepper. Serve immediately.
