Ingredients

1 Tablespoon Olive Oil

1/3 Cup Shallot Or Onion, minced

1 Tablespoon Madras Curry Powder

2 Cups Sprouted Brown Rice

4 Cups Low Sodium Chicken Stock, Broth, Or Water

1 Tablespoon Room Temperature Butter

1/2 Cup Golden Raisins

1/2 Cup Natural Sliced Toasted Almonds

1/2 Cup Fancy Shredded Coconut
Directions

Heat olive oil in medium saucepan over high heat until shimmering.

Add shallot or onion and cook until translucent, about 2 to 3 minutes. Stir in curry powder and cook 1 minute more.

Add rice, chicken broth and pinch of salt and bring to a boil. Reduce heat to low, cover with tight-fitting lid and simmer until rice is cooked through and all liquid has absorbed, about 40 minutes.

Remove from heat and stir in butter, raisins, almonds and coconut.

Season to taste with salt and black pepper and serve immediately.
