2 Cups Brown Basmati Rice

3 Cups Water

5 Teaspoons Kosher Sea Salt Flakes, divided

2 Cups Chopped Cauliflower

2 Cups Chopped Broccoli

2 Cups Low-Fat Shredded Cheddar Cheese, divided

2 Tablespoons Low-Fat Cream Cheese

2 Teaspoons Granulated Onion

2 Teaspoons Granulated Garlic

2 Teaspoons Smoked Sweet Paprika

Heat an oven to 350° F

Bring the 1 1/2 cups of water to a boil with 1 teaspoon of salt in a small sauce pot. Add the rice, cover, reduce the heat to a simmer and cook undisturbed for 25-30 minutes. Remove the pot and allow the rice to sit for 10 minutes.

Place the cauliflower in a small pot and cover with water. Boil until the cauliflower is very soft then strain. Puree the cauliflower and the cream cheese in a processor to a thick, smooth consistency. Set aside

Use non-stick spray to lightly coat a casserole dish.

In a medium bowl mix the rice with 1 cup of broccoli, cauliflower and cheese sauce, salt, spices and 1 cup of cheddar. Spread this mixture onto the casserole dish evenly. Sprinkle with the remaining cheddar and broccoli and bake for 30 minutes.

Allow the casserole to sit for 5 minutes before serving.
