1 Pound 21-Bean Blend

2 Tablespoons Unsalted Butter

1 Pound Ham, diced

1 Large Yellow Onion, diced

1 Medium Carrot, peeled and sliced into coins

1 Celery Rib, diced

4 Cups Chicken Stock

1/2 Cup Tomato Juice

4 Medium Red Potatoes, peeled and diced

1 Teaspoon Worcestershire Sauce

1/2 Teaspoon Garlic Powder

1/2 Teaspoon Smoked Hot Paprika

1/2 Teaspoon Crushed Red Pepper

1/4 Teaspoon Ground Cumin
Directions

Place beans in large bowl, and cover with water. Soak overnight.

Melt butter in large pot over medium heat. Add ham, onion, carrot and celery and cook for 5 minutes, or until onions are translucent.

Add beans, stock, tomato juice, potatoes and Worcestershire sauce. Bring to a boil, reduce heat and simmer for 1 hour.

Add remaining ingredients, and continue to simmer for 1 more hour, or until beans are tender. Season to taste with salt and black pepper.
