This simple but satisfying bean and sausage soup utilizes our specially crafted Gourmet Bean Blend. The mix includes navy beans, small red beans, pinto beans, black turtle beans, split peas, and lentils. The recipe is very adaptable, so feel free to switch in your favorite sausage — chicken, turkey, or pork sausages all work well.

2 Tablespoons Olive Oil

1 Pound Italian Sausage

1 Yellow Onion, diced

1 Green Bell Pepper, stemmed, seeded and diced

1 Red Bell Pepper, stemmed, seeded and diced

4 Cloves Garlic, minced

1 15-Ounce Can Diced Tomatoes

1 8-Ounce Can Tomato Sauce

1/4 Teaspoon Red Chili Flakes

1/4 Teaspoon Fine Ground Black Pepper

1 Pound Gourmet Bean Blend

8 Cups Water Or Chicken Stock

Parmesan Cheese, grated
Directions

Cover Gourmet Bean Blend with cold water and soak overnight. Drain and rinse beans with cold water, set aside.

Heat olive oil in large pot over medium-high heat. Add sausage and onion and cook, stirring often, until sausage is browned. Add garlic, red peppers and green peppers and cook for 2 minutes, or until softened.

Add remaining ingredients except Parmesan cheese and stir to combine. Bring to a boil over high heat, skimming off any foam that rises to the top. Reduce heat and simmer, stirring occasionally for 1-1/2 to 2 hours or until beans are tender and soup is thick.

Season with salt to taste. Serve with grated Parmesan cheese.
