Ingredients

Makes 1 1/2 cups

Directions

  1. Chop the peaches and place in a medium pot with the sugar, vinegar, chile and garlic. Bring to a simmer and cook slowly until the mixture has thickened and the chile and peaches are broken down.

  2. Transfer everything to a blender and add the cardamom and salt. Puree very smooth and strain if desired. Keep covered in a refrigerator for up to one month.
