Red Cardamom poached pears are an elegant dessert and surprisingly easy to make. Red Cardamom heightens the flavors and brings out the essence of orange and cinnamon. Serve with ice cream or alone with the decadent Red Cardamom spiked syrup.

Ingredients
Makes 4 servings

2 Cups Red Wine

1 1/2 Cups Granulated Sugar

2 Oranges, zest and juiced

1 4'' Cinnamon Stick, broken in half

4 Pears, ripe

Add wine, sugar, orange juice and zest and cinnamon to medium pot. Lightly crush red cardamom pods and remove seeds. Discard pod skin. Crush seeds with knife, or smash in mortar and pestle. Add broken up seeds to pot. Cover pot and place it over medium heat. Simmer liquid for 10 minutes.

Peel pears. If bases of pears are not flat, trim them so they stand up in pot. Place pears into poaching liquid and cover pot. Simmer on low heat for 30 to 40 minutes, or until knife easily pierces fruit.

Remove pears and continue cooking liquid until it becomes syrup. Strain.

Serve pears warm or at room temperature.
