Ingredients

Makes 8 to 10 servings

  • 1 Cup Fine Bulgur Wheat, uncooked

  • 2 Cups Boiling Water

  • 1 Tablespoon Lemon Zest

  • 2 Tablespoons Fresh Lemon Juice

  • 1 Clove Garlic, minced

  • 1/2 Cup Olive Oil

  • 1 Teaspoon Fine Sea Salt

  • 1/2 Teaspoon Ground Black Peppercorns Dustless

  • 2 Large English Cucumbers, cut into 1/4 inch dice

  • 2 Cups Cherry Tomatoes, quartered

  • 2/3 Cup Flat Leaf Parsley, chopped plus 2 tablespoons for garnish

  • 2/3 Cup Fresh Mint, chopped

  • 1/2 Cup Green Onions, chopped

Directions

  1. Rinse Fine Bulgur and place in large heat-proof bowl. Stir in boiling water and let stand, covered, 15 minutes. Fluff with fork. Set aside and let cool to room temperature.

  2. Meanwhile, whisk together lemon zest, lemon juice and garlic in small bowl, and gradually whisk in olive oil. Season dressing with salt and black pepper.

  3. Place 1/3 of dressing in large bowl, and add cooked bulgur and remaining ingredients.

  4. Toss until evenly incorporated. Serve with drizzle of extra dressing.
