Fonio Flour Pancakes with Raisins and Blueberries

Ingredients

  • 1 1/2 Cups Fonio Flour

  • 3 Teaspoons Baking Powder

  • 1/4 Teaspoon Salt

  • 1 Tablespoon Sugar

  • 2 Eggs

  • 2 Cups Whole Milk

  • 1/4 Cup Vegetable Oil

  • 1 Teaspoon Vanilla Extract

  • Pan Spray

  • 2/3 Cup Natural Seedless Raisins

  • 2/3 Cup Blueberries

Directions

  1. In a medium bowl, mix the Fonio Flour, baking powder,salt and sugar.

  2. In a separate bowl, mix the eggs, milk, oil, raisins, and vanilla. Add wet to dry, and stir lightly, just until mixed. Let rest for half an hour in the refrigerator.

  3. Heat a large nonstick pan to medium low heat. Spritz with pan spray, and make three 6-i inch pancakes at a time, cooking on each side until golden brown. Repeat until all batter is used.

  4. Garnish generously with fresh blueberries, and serve with butter, maple syrup,or your favorite sides.
