Ingredients

1 1/2 Cups Fonio Flour

3 Teaspoons Baking Powder

1/4 Teaspoon Salt

1 Tablespoon Sugar

2 Eggs

2 Cups Whole Milk

1/4 Cup Vegetable Oil

1 Teaspoon Vanilla Extract

Pan Spray
-
2/3 Cup Natural Seedless Raisins

2/3 Cup Blueberries
Directions

In a medium bowl, mix the Fonio Flour, baking powder,salt and sugar.

In a separate bowl, mix the eggs, milk, oil, raisins, and vanilla. Add wet to dry, and stir lightly, just until mixed. Let rest for half an hour in the refrigerator.

Heat a large nonstick pan to medium low heat. Spritz with pan spray, and make three 6-i inch pancakes at a time, cooking on each side until golden brown. Repeat until all batter is used.

Garnish generously with fresh blueberries, and serve with butter, maple syrup,or your favorite sides.
