In this traditional North Indian recipe, our Chana Dal Peas are simmered with spiced water until they break down, then combined with a hot flavored ghee or oil mixture known as "tadka", to provide a final layer of flavor and richness.

1 1/2 Cups Chana Dal Peas

5 Cups Water

1/2 Teaspoon Ground Turmeric

2 Thick Slices Unpeeled Ginger

1 Teaspoon Kosher Sea Salt Flakes

1/4 Teaspoon Garam Masala

3 Tablespoons Ghee Or Vegetable Oil

1/2 Teaspoon Cumin Seed

2 Cloves Garlic, peeled and chopped

1/2 Teaspoon De Arbol Chile Powder
Directions

Place peas in large pot with water. Bring to a boil, and skim to remove surface foam. Add turmeric and ginger. Reduce heat to low, and cover pot, leaving lid slightly askew. Simmer for 1-1/2 hours, or until dal is tender, stirring frequently during final 30 minutes of cooking, both to help break down peas and to prevent scorching.

Remove ginger. Stir in salt and Garam Masala.

Heat ghee in small pan over medium heat. When hot, add cumin seeds and garlic. Stir until garlic pieces are lightly browned, 2 to 3 minutes. Stir in chile powder.

Pour ghee mixture into dal, and mix thoroughly.
