This simple, fragrantly spiced lentil dip is given color and flavor from our Madras-Style Curry Powder and cayenne pepper. Delicious eaten on pita, vegetable crudités, or even spread on sandwiches, this dip is sure to become a new favorite.

1 Cup Petite Crimson Lentils

1 Medium Onion, chopped

2 1/2 Cups Water

2 Teaspoons Madras Curry Powder

1 Teaspoon Cumin Seed

3/4 Teaspoon Ground Cayenne Pepper

1 Tablespoon Vegetable Oil

2 Cloves Garlic, crushed
Directions

Combine lentils, onion, and water in medium saucepan. Cover and bring to a boil over medium-high heat. Reduce heat to low, and simmer until lentils are soft, about 25 minutes.

Pass lentils through food mill or grind in blender.

Toast curry powder and cumin seeds in small skillet over medium heat until fragrant. Add cayenne, oil and garlic, and whisk until combined.

Stir spice mixture into lentil purée, and season with salt and ground black pepper.
