Ingredients

2 Cups Tongues Of Fire Beans

2/3 Cup Chopped Onion

2 Teaspoons Minced Garlic

1/4 Cup Berbere Spice Blend

Kosher Sea Salt Flakes, to taste

2 Tablespoons Vegetable Oil

Water, divided
Directions

Soak the beans in 5 cups of water overnight. The next day, drain off water. Rehydrate the minced onion in one cup water.

In a large pot, add the vegetable oil on medium heat. Add the rehydrated onion and minced garlic, stirring for 2 minutes. Add 1 Tablespoon of the Berbere spice blend and stir for half a minute.

Add the remaining 4 cups of water ( or chicken or vegetable stock if you have available). Add the soaked beans, and cook on low for 1 hour, then add a teaspoon of salt. Cook for another hour until beans are soft and cooked through. Stir in Berebere spice in last 5 minutes of cooking.

Take one third of the soup and puree in a high speed blender, then add back to the pot and stir well. Adjust seasoning and spice level to taste.
