2 Cups Dried White Corn

2 Cups Stale Bread Cubes

1 Cup Milk

1 Cup Heavy Cream

2 Eggs

1 Large Onion, diced

1 Small Red Bell Pepper, diced

1 Clove Garlic, minced

1 Tablespoon Honey

3 Teaspoons Kosher Sea Salt Flakes, divided

1 Teaspoon Smoked Sweet Paprika

Preheat oven to 350°F.

Soak White Corn for 24 hours. Drain soaking liquid and rinse corn.

Place corn in 2-quart pot and cover with cold water and 1 teaspoon of salt. Bring water to a boil and simmer for 2 hours, adding more water if needed. When corn is slightly chewy in texture, drain corn and remove from heat.

Place drained corn in food processor, and pulse corn into small pieces. Add bread, milk, cream and eggs, and pulse 2 or 3 more times until combined.

Add corn mixture to large bowl along with onions, peppers, garlic, honey, remaining salt, ground black pepper and paprika. Mix thoroughly. Pour into greased 3-quart baking dish.

Transfer dish to oven and bake for 50 to 60 minutes, or until toothpick inserted in middle comes out clean.
