4 Tablespoons Butter

1 Carrot, diced

4 Celery Stalks, diced

1 Onion, diced

1 Cup Pumpkin Pieces

1 Tablespoon Thyme, chopped

4 Tablespoons Flour

2 Cups Chicken Broth

1 Cup Milk

1 1/2 Cups Turkey, cooked, diced or pulled

2 Tablespoons Parsley, chopped

2 Teaspoons Kosher Sea Salt Flakes

Directions

Melt butter in large pot over medium heat. Add carrots, celery and onions, and cook for 8 minutes. Add pumpkin pieces and thyme, and cook until bottom of pot begins to brown a little. Add flour, and stir gently with wooden spoon for 2 minutes.

Add broth and milk and reduce heat to low. Cook until chowder thickens, then add turkey, parsley, salt and ground black pepper. Stir to combine and heat through.
