Truffle-Salmon Quiche

Ingredients

Making 6 servings

  • 2 Cups Mozzarella Cheese, shredded

  • 1 Green Onion, chopped

  • 1 Tablespoon Flour

  • 1/2 Teaspoon Salt

  • 8 Ounces Canned Cooked Salmon, drained and flaked

  • 3 Eggs

  • 2 Ounces Sliced Black Truffles

  • 1 Cup Whole Milk

  • 1 Pinch Ground Nutmeg

  • 1 9-Inch Pastry Shell

Directions

  1. Preheat oven to 450°F.

  2. Meanwhile, combine cheese, onion, flour, and salt. Spread half of mixture on bottom of pastry shell. Top mixture with salmon, then spread remainder of cheese mixture on top of salmon.

  3. Add eggs, truffles, nutmeg, and milk to blender, and process until smooth. Pour blended liquid mixture over ingredients in pastry shell.

  4. Transfer to oven, and bake for 15 minutes. Reduce heat to 350°F and bake for 30 minutes more, or until well-browned.
