1 1/4 Cups Cake Flour, sifted

2 Teaspoons Ginger Powder

1/2 Teaspoon Baking Powder

1/2 Teaspoon Baking Soda

1/4 Teaspoon Kosher Sea Salt Flakes

1/2 Cup Light Brown Sugar

1/4 Cup Canola Oil

1 Large Egg
-
2 Teaspoons Vanilla Extract, Bourbon Madagascar

1 Teaspoon Lime Zest, freshly grated

3 Tablespoons Lime Juice

2 Tablespoons Milk

1 1/2 Cups Dried Diced Papaya

1 1/2 Cups White Confectionary Drops
Directions

Preheat oven to 350°F and grease 8-inch by 12-inch baking pan.

Combine flour, ginger, baking powder, baking soda and salt in medium mixing bowl, and whisk to incorporate. Whisk together brown sugar, oil, egg, vanilla and lime zest in large mixing bowl until smooth. Stir in lime juice and milk.

Add dry ingredients to wet, along with papaya and half of confectionary drops, stirring until just combined. Be careful not to over-mix.

Spread batter evenly over bottom of prepared pan using spatula. Sprinkle coconut and remaining confectionary drops evenly over top.

Transfer to oven and bake until golden-brown on top, about 20 to 25 minutes. Let cool completely in pan before slicing into 15 bars.
