  1. Trim the brisket to size, leaving 1/4” of fat cap. Thoroughly rub the brisket with the Texas BBQ Rub. Wrap the brisket and refrigerate for a minimum of 1 hour or overnight if time is available.

  2. Heat a smoker to 275°F with any wood or pellets you prefer. Hickory or Mesquite is recommended. Insert a thermometer in the brisket and cook with a steady smoke until the internal temperature reaches 185°F. As a general rule of thumb, assume 45 minutes of cooking per pound of meat.

  3. Once the Brisket reaches 185°F, wrap it in butcher paper and return it to the smoker. Finish cooking at 275° until the internal temperature reaches at least 204°F. Once the brisket reaches temperature, remove it from the smoker and rest it wrapped on the counter for a minimum of 30 minutes, up to 1 hour. After resting, slice against the grain and serve.
