Sweet Ginger Chicken

Ingredients

Makes 6 servings

  • 6 Chicken Thighs, Bone-In

  • 1 Tablespoon Vegetable Oil

  • 1 Ginger, Small Piece, scrubbed and sliced thin

  • 1/2 Cup Chicken Broth

  • 1/3 Cup White Rock Crystal Sugar

  • 2 Tablespoons Soy Sauce

  • 1/2 Teaspoon Salt

  • 2 Scallions, sliced thin

Directions

  1. Rinse chicken and pat dry.

  2. Heat oil in large skillet over high heat. Add ginger and cook until lightly browned.

  3. Reduce heat to medium, push ginger to edges of pan and add chicken pieces, skin side down, in single layer.

  4. Sauté chicken for 8 minutes, then flip, and cook another 8 minutes until chicken is completely cooked. Discard fat from pan.

  5. Stir broth, sugar crystals, soy sauce and salt into pan around chicken. Cover and bring to a boil, then reduce heat to medium and simmer until sauce coats chicken.

  6. Turn chicken pieces over, cover, and continue cooking until thermometer reads 165° in center of thigh. Place chicken onto platter and smother with juices.

  7. Serve garnished with scallions.
