Makes 4 servings


  1. Blanch tomatoes for 1 minute in boiling water; drain.

  2. Combine tomatoes, basil, pine nuts, garlic and sugar in food processor or blender. Process until mixture is finely ground. Slowly drizzle in olive oil with machine running, and continue to process until mixture has consistency of smooth paste.

  3. Transfer mixture to bowl and stir in Parmesan cheese. Add salt and pepper to taste.
