This simply seasoned yet dramatic appetizer is sure to impress. Tender squid is stuffed with our striking Black Calamari Orzo blended with cheese and cream, then topped with marinara sauce, making for a filling entrée for one or a great starter for two.

Squid Stuffed with Black Calamari Orzo

Ingredients

Makes 2 servings

  • 4 Cups Water

  • 1 Cup Black Calamari Orzo

  • 1 Teaspoon Fine Sea Salt

  • 1 Tablespoon Olive Oil

  • 2 Large Squid, cleaned

  • 1 Shallot, finely chopped

  • 1 Garlic Clove

  • 1/4 Cup Heavy Cream

  • 2 Tablespoons Grated Parmesan Cheese

  • 1 Tablespoon Chopped Fresh Chives

  • 1 Cup Marinara Sauce

Directions

  1. Preheat oven to 400°F.

  2. Bring 4 cups water to a boil in large pot. Add salt and Black Calamari Orzo, and boil for 10-12 minutes. Strain orzo and rinse with cold water. Drain and transfer to large bowl. Set aside.

  3. Heat olive oil in medium skillet over medium-high heat. Add squid, and cook for 1 minute before transferring to paper towels to cool. Chop tentacles into small pieces, and return to pan. Reduce heat to low, add shallot and cook for 3 minutes. Add garlic, followed by cream and orzo. Cook until cream coats orzo, and remove from heat. Fold in Parmesan cheese.

  4. Pour marinara sauce into oven-safe dish. Stuff squid bodies with orzo mixture. Squid should be very full, so try to use all of filling. Arrange squid on top of marinara sauce.

  5. Transfer dish to oven and bake for 15 minutes.

  6. Remove dish from oven, and transfer stuffed squid onto cutting board to cool for 10 minutes.

  7. Use sharp knife to slice squid into 1/2-inch pieces, and place on serving plate. Spoon marinara sauce around squid and garnish with chopped chives.
