Spicy Sausage and Heirloom Bean Stew

Ingredients

Makes 12 servings

  • 2 Cups Heirloom Bean Blend, sorted and rinsed

  • 2 Cups Spicy Italian Sausage Links, casings removed

  • 1 Cup Yellow Onion, diced

  • 1 Cup Carrot, diced

  • 1/2 Cup Celery, diced

  • 2 Tablespoons Fresh Thyme, chopped

  • 1 Tablespoon Fresh Rosemary, chopped

  • 1 Teaspoon Dried Oregano

  • 1 Teaspoon Crushed Red Pepper

  • 2 Bay Leaves

  • 1 Teaspoon Ground Black Pepper

  • 2 Sea Salt

  • 5 Cups Chicken Or Vegetable Broth

  • 2 Teaspoons Red Wine Vinegar

  • Grated Parmesan Cheese, for garnish

Directions

  1. Soak Heirloom Bean Blend overnight in plenty of cold water.

  2. Drain beans, place in large stock pot, and cover with fresh water by about 1 inch. Bring to a boil, and cook for 45 minutes. Beans with still be firm. Drain and set aside.

  3. Wipe out stock pot and place over high heat. Crumble sausage into pot and brown until cooked through, about 8 minutes. Remove from pot and set aside.

  4. Add onions, carrots and celery to pot, and sauté until onions turn translucent, about 5 minutes. Add thyme, rosemary, oregano, crushed red pepper, bay leaves, salt and black pepper, and continue to cook for 3 minutes.

  5. Add par-cooked beans and broth to pot, and bring to a boil. Reduce heat to a simmer and cook until beans are tender and broth has thickened, about 1 hour, stirring occasionally.

  6. Return the cooked sausage to the pot, stir in red wine vinegar, and serve topped with Parmesan cheese.
