1/4 Cup (1/2 Stick) Unsalted Butter

2 Yellow Onions, chopped

2 Cloves Garlic, minced

2 Teaspoons Hot Curry Powder

1/2 Teaspoon Ground Coriander

1/4 Teaspoon Ground Cayenne Pepper

1/4 Teaspoon Crushed Red Pepper

3 (15 Oz.) Cans Pumpkin Puree

5 Cups Vegetable Broth
-
2 Cups Milk
-
1/2 Cup Granulated Brown Sugar

1/2 Cup Heavy Cream

Creme Fraiche, for garnish

Mild Chile Threads, for garnish
Directions

Melt butter in large stock pot over medium-low heat. Add onions and garlic, and cook until soft, stirring occasionally.

Stir in Hot Curry Powder, coriander, cayenne pepper and crushed red pepper.

Stir pumpkin and broth into pot. Increase heat to medium-high and bring to a boil. Reduce heat and simmer until heated through.

Purée soup mixture with immersion blender or in batches in food processor. Return to stove.

Whisk in milk, brown sugar and cream until smooth.

Garnish individual servings with dollop of crème fraîche and Mild Chile Threads.
