Ingredients

Makes 2 cups

  • 2 Cups Sliced Mango With Chile, diced

  • 4 Cloves Garlic, minced

  • 1-Inch Piece Fresh Ginger, peeled and minced

  • Zest And Juice Of 1 Orange

  • 1 Tablespoon Ground Cumin

  • 1 Tablespoon Ground Coriander

  • 1/3 Cup Apple Cider Vinegar

  • 1/3 Cup Brown Sugar

  • 1/3 Cup Raisins

  • Salt

  • Ground Black Pepper

Directions

  1. Add mango, garlic, ginger, orange zest, orange juice, cumin, coriander, vinegar, sugar, raisins and pinch of salt and pepper to medium saucepan. Bring to a boil, reduce heat to a low simmer, and cook until very thick, about 20 to 25 minutes.

  2. Let mixture cool, and season with additional salt, if desired.
