This recipe is a tremendous combination of sweet and spicy flavors, amping up what is already one of our favorite foods: bacon. Our smoky Diced Chipotle Chiles add heat, while honey and brown sugar add delicious sweetness.

Ingredients

1 Pound Sliced Bacon

2 Tablespoons Granulated Honey

2 Tablespoons Granulated Brown Sugar

1 Tablespoon Mustard Powder

1 Tablespoon Coarse Sea Salt

1 Tablespoon Butcher Cut Black Peppercorns

1 Tablespoon Diced Dried Chipotle Chiles

Preheat oven to 325°F, and position rack in center of oven.

Combine Granulated Honey, brown sugar, mustard powder, salt and black pepper in small bowl. Spread mixture out onto sheet pan. Line separate sheet pan with aluminum foil, and place rack on top.

Dip bacon strips in spice mixture, gently pressing mixture onto bacon. Lift bacon strips carefully and lay onto rack on top of foil-lined pan. Cover any bare spots on bacon with extra spice mixture.

Transfer pan to oven, and cook bacon for 45 minutes, checking periodically to prevent burning. Do not turn bacon. About halfway through cook time, sprinkle sea salt over bacon strips.

Remove bacon from oven, and allow to cool to room temperature. If bacon is not crisp enough to stand upright, return to oven at 300°F and cook for 10 to 15 minutes more.
