Black mission figs are sweet and filled with distinctive fig flavor. Subtle spices and a shot of acidic lemon juice make this easy jam a perfect accompaniment to cooked, grilled meats or as a spread with butter.

1 Cup Water

2 Cups Granulated Sugar

1 Orange, juiced

1/2 Teaspoon Ground Cardamom

1/4 Teaspoon Ground Korintje Cinnamon

1/4 Teaspoon Ground Nutmeg
Directions

Trim the stems off the figs and cut them in half. Cover with water and soak overnight.

Pour figs and water into a 1-quart heavy bottom saucepan and add the sugar and spices. Bring to a brisk simmer, stirring once or twice and cook on medium-to-medium high heat until the figs break down and thicken the mixture. The cooking will take about 20 minutes.

When the mixture is almost thick enough to hold to a spoon stir in the orange juice then remove from the heat and allow it to cool completely before pouring into a container and sealing. Keep jam in a refrigerator for up to 2 weeks.
