  1. Combine stock, split peas, ham bone, carrots, onion, celery, chipotle chile and dill in heavy stock pot. Bring to a simmer and cook until ham is cooked through, about 1 hour.

  2. Remove from heat and discard ham bone, chile and onion. Season to taste with sea salt and serve with lemon wedges to squeeze over.
