Ingredients

2/3 Cup Chopped Onion

2/3 Cup Celery, Cross-Cut

2 Tablespoons Minced Garlic

2 Cups French Green Lentils

Kosher Sea Salt Flakes, to taste

6 Pints Water Or Stock

Ground Pepper, to taste
Directions

Place all ingredients except for salt and pepper in a slow cooker., Turn heat to high setting, and let simmer for 1 1/2 hours. Add seasoning then continue to cook for another hour or so until lentils are soft.

Serve over pasta, rice or as is as a hearty soup.
