Ingredients

2 Cups Green Curry Rice, uncooked

4 Cups Water

12 Large Shrimp, peeled, cleaned, tail-off

1 Teaspoon Olive Oil

1 Teaspoon Chili Powder

1 Teaspoon Ground Coriander

1/2 Teaspoon Fine Sea Salt

1/2 Teaspoon Ground Black Peppercorns Dustless
Directions

Combine Coconut Green Curry Rice and water in large saucepan, and bring to a boil. Reduce heat to medium-low, cover and simmer until rice is cooked and all liquid is absorbed, about 20 minutes. Remove from heat, and let stand 5 minutes. Fluff with fork, cover and keep warm until ready to serve.

While rice cooks, preheat grill or grill pan to medium-high.

Toss shrimp with 1 teaspoon olive oil, then toss with chili powder, coriander, salt and black pepper.

Thread 3 shrimp onto each of 4 skewers. Place on grill until cooked through, about 1-1/2 to 2 minutes per side.

Transfer Coconut Green Curry Rice to serving bowl, and top with shrimp. Serve immediately.
