Shrimp, Asian Pear and Scallion Skewers with Vietnamese Lemongrass Rub

Ingredients

  • 6 Scallion, ends trimmed

  • 1 Asian Pear

  • 12 Large Shrimp, peeled and deveined

  • 1 Tablespoon Southeast Asian Rub

  • 1 Teaspoon Sesame Oil

  • 1 Teaspoon Honey

  • 1/2 Lemon, juiced

  • 1/2 Teaspoon Toasted Sesame Seed

  • 3 Wooden Skewers

Directions

  1. Soak wooden skewers in water for at least 30 minutes.

  2. Meanwhile, cut white parts of scallions into 2-inch long pieces and set aside. Slice green parts and set aside. Slice pear into thin wedges, discarding core.

  3. Place shrimp, scallion and pear slices in small bowl and rub with oil, honey, lemon juice and Vietnamese Lemongrass Rub. Cover and transfer to refrigerator to marinate for 15 minutes.

  4. Thread 1 shrimp on skewer, followed by slice of pear, piece of white scallion, and another shrimp. Repeat with remaining skewers.

  5. Heat grill over medium. Place skewers on grill and cook until shrimp are bright pink and firm, 3 to 4 minutes per side, brushing with marinade before each turn.

  6. Garnish with chopped scallions and sesame seeds.
