1 Package Dry Yeast (1/4 Ounce)

4 1/4 Cups All-Purpose Flour, plus extra for dusting

1 1/2 Tablespoons Shiitake Mushroom Powder, divided

5 Tablespoons Unsalted Butter, softened

2 Tablespoons Sugar

1 1/2 Tablespoons Kosher Sea Salt Flakes, divided

1/8 Teaspoon Garlic Powder

1 Pinch Mediterranean Oregano
Directions

Place 1/4 cup warm water in bowl of mixer, sprinkle in yeast and set aside until foamy, about 5 minutes.

Add flour, 1 tablespoon Shiitake Mushroom Powder, 2 tablespoons butter, sugar, 1 tablespoon salt and 1-1/4 cups plus 2 tablespoons warm water. Mix with paddle attachment until slightly sticky dough forms.

Place dough on floured surface and knead by hand until dough is very smooth and soft. Roll into 2-foot-long log, and cut into 16 pieces, 1-1/2-inches in length. Knead each piece slightly and shape into 7-inch long breadsticks.

Arrange breadsticks 2 inches apart on parchment-lined baking sheet. Cover with cloth, and let rise in warm spot until almost doubled.

Preheat oven to 400° F.

Melt remaining 3 tablespoons butter. Mix melted butter with 1/2 tablespoon Shiitake Mushroom Powder and 1/4 teaspoon salt, and brush mixture onto breadsticks.

Transfer breadsticks to oven and bake until slightly golden, about 15 minutes.

Meanwhile, combine 1/4 teaspoon salt, garlic powder and oregano. Brush warm baked breadsticks with any remaining butter and sprinkle with garlic-oregano mixture.
