Directions

  1. Place 1/4 cup warm water in bowl of mixer, sprinkle in yeast and set aside until foamy, about 5 minutes.

  2. Add flour, 1 tablespoon Shiitake Mushroom Powder, 2 tablespoons butter, sugar, 1 tablespoon salt and 1-1/4 cups plus 2 tablespoons warm water. Mix with paddle attachment until slightly sticky dough forms.

  3. Place dough on floured surface and knead by hand until dough is very smooth and soft. Roll into 2-foot-long log, and cut into 16 pieces, 1-1/2-inches in length. Knead each piece slightly and shape into 7-inch long breadsticks.

  4. Arrange breadsticks 2 inches apart on parchment-lined baking sheet. Cover with cloth, and let rise in warm spot until almost doubled.

  5. Preheat oven to 400° F.

  6. Melt remaining 3 tablespoons butter. Mix melted butter with 1/2 tablespoon Shiitake Mushroom Powder and 1/4 teaspoon salt, and brush mixture onto breadsticks.

  7. Transfer breadsticks to oven and bake until slightly golden, about 15 minutes.

  8. Meanwhile, combine 1/4 teaspoon salt, garlic powder and oregano. Brush warm baked breadsticks with any remaining butter and sprinkle with garlic-oregano mixture.
