1 Cup French Gourmet Blend

1 3/4 Cups Vegetable Stock

1/2 Teaspoon Kosher Sea Salt Flakes, divided

1 Tablespoon Butter

1 Tablespoon Olive Oil

1 Onion, thinly sliced

1/2 Teaspoon Fresh Thyme Leaves, chopped

1/4 Cup Dry White Wine
Directions

Combine French Gourmet Blend, stock and 1/4 teaspoon salt in saucepan set over high heat. Bring to a boil, cover and reduce heat to a simmer. Cook for 30 to 35 minutes, then remove from heat and let stand 5 minutes.

While rice cooks, place sun-dried tomatoes in small bowl and cover with boiling water. Let sit 5 minutes, then drain. Set aside.

Heat butter and olive oil in large skillet over medium heat. Add onions and 1/4 teaspoon salt, and cook, stirring occasionally, until soft and deep golden-brown. Stir in reserved sun-dried tomatoes, thyme and wine, and cook, stirring constantly, until wine evaporates, about 2 minutes. Remove from heat.

Fluff cooked French Gourmet Blend with fork, and transfer to serving bowl. Add onion mixture, and toss gently to combine. Adjust seasoning, if necessary. Serve hot.
