Ingredients
Makes about 4 cups

8 Ounces Rose Petals

7 Cups White Sugar, divided

3 Tablespoons Freshly Squeezed Lemon Juice

3 Cups Water
Directions

Toss Rose Petals and 2 cups sugar in large, non-reactive bowl, crushing gently by hand to bruise petals. Cover and let macerate in refrigerator overnight.

Place remaining 5 cups sugar, lemon juice and water in large saucepan and bring to a boil over medium high heat, stirring to dissolve sugar. Add rose petal mixture and return to a boil. Continue stirring to dissolve sugar.

Reduce heat to low and simmer for 30 minutes.

Remove from heat and let cool to room temperature. Strain through fine-mesh sieve and discard solids.

Store in refrigerator until ready to use.
