The signature dish of Kashmir, India is widely considered to be rogan josh. Traditionally made with lamb, creating this slow-stewed meal is as easy as adding our Rogan Josh Curry Powder. The flavors of ginger, garlic and chiles blend with fennel and cinnamon to recreate the classic dish.

Ingredients

2 Pounds Lamb Shoulder, cleaned and cut into 2" chunks

1/2 Cup Ghee Or Butter

3 Tablespoons Rogan Josh Curry Powder

2 Teaspoons Kosher Salt

2 Cups Canned Whole Tomatoes, hand crushed, slightly

1/4 Cup Water

1/4 Cup Whole Milk Yogurt
Directions

Heat oven to 325°F.

Place a heavy-bottomed pot or Dutch oven over medium heat and add the ghee. When the fat is shimmering, add the lamb chunks and sprinkle with a little salt. Brown the meat evenly until all the sides are crusty and golden.

Add the Rogan Josh Curry Powder. Stir while toasting for 2 to 3 minutes, then add tomatoes, hand-crushing before adding to the pot. Add the water and yogurt and cover. Cook in the oven for 2 hours or until the meat is very tender. Simmer on the stovetop if the sauce is too thin or add water if to thick.
