1 Whole Chicken, 2-3 pounds

4 Teaspoons Salt-Free Organic Poultry Seasoning

6 Baking Potatoes, peeled, boiled and mashed
Directions

Preheat oven to 375°F.

Rinse chicken under cold water and pat dry with paper towels.

Line roasting pan or baking sheet with aluminum foil. Place chicken on rack positioned on top of pan. Rub chicken with 3 teaspoons Organic Salt-Free Poultry Seasoning, rubbing any extra into cavity.

Transfer to oven and roast for 1 hour and 20 minutes, then use meat thermometer to check that internal temperature reads 165°F in thickest part of leg.

Remove chicken and let rest for 10 minutes before carving. Pour off juices and stir into mashed potatoes with remaining teaspoon poultry seasoning.
