1 Tablespoon Olive Oil

1 3/4 Cups Broth Or Water

1 Tablespoon Butter

6 Cloves Of Garlic, minced

1/4 Small Yellow Onion, minced

2 Cups Sliced Portabella Mushrooms, rinsed

1 Cup Organic Quinoa

1 Teaspoon Thyme Leaves, chopped

1 Teaspoon Rosemary Leaves, chopped

1/4 Cup White Wine

Salt And Ground Black Pepper
Directions

In a medium skillet over medium-high heat add the oil and butter. When the butter melts add the onion and garlic and cook for 1 minute. Add the mushrooms and cook for 5-7 minutes until the mushrooms give off their water and brown a bit.

Add the quinoa and wine. Cook the wine to evaporated level and add the broth to the pan. Cover and turn the heat to a simmer. Cook for 15 minutes and remove from heat.

After 5 minutes fluff the pilaf and serve with fresh herbs or grated cheese.
