Our Quinoa Flakes make an excellent gluten-free breading for kid-friendly chicken tenders. A dash of our Seasoning Salt and some Onion Powder and Ground Cayenne Pepper really up the flavor factor and make these tenders pop.

Ingredients

1 1/2 Pounds Boneless, Skinless Chicken Tenders

1 Cup Buttermilk

2 Tablespoons Hot Sauce

1 1/2 Cups Quinoa Flakes

1 Teaspoon Onion Powder

1 Teaspoon Seasoning Salt

1/4 Teaspoon Ground Cayenne Pepper

1/4 Teaspoon Fine Ground Black Pepper

1/4 Cup Vegetable Oil
Directions

Place chicken in sealable plastic bag with buttermilk and hot sauce. Marinate in refrigerator for 8 hours.

Preheat oven to 350°F. Line baking sheet with parchment paper.

Spread Quinoa Flakes over parchment-lined baking sheet in even layer. Transfer to oven and bake for 20 minutes, tossing occasionally.

Remove Quinoa Flakes from oven and let cool. Transfer to wide, shallow bowl, and toss with onion powder, seasoning salt, cayenne pepper and ground black pepper.

Remove chicken from marinade, and roll in quinoa mixture until all pieces are thoroughly coated.

Heat vegetable oil in large skillet over medium heat, add chicken and cook until browned on each side and cooked through, about 5 minutes per side.

Serve immediately with your favorite dipping sauce.
