2 Cups Dried Diced Mango

1/2 Cup Onion, diced

1/4 Cup Golden Raisins

1/4 Cup Light Brown Sugar

1/4 Cup White Vinegar

1/4 Cup Sherry

2 Tablespoons Lemon Juice

1/2 Teaspoon Cumin Seed

1/2 Teaspoon Whole Coriander Seed

1/2 Teaspoon Ground Nutmeg

1/4 Teaspoon Kosher Sea Salt Flakes
Directions

Place mango in bowl and cover with hot water. Let sit for 10 minutes, until rehydrated.

Meanwhile, combine all remaining ingredients in medium-sized saucepan. Bring to a boil, reduce heat and simmer for 5 minutes.

Drain mango and add to mixture. Cook for another 15 minutes, stirring frequently until thick. Remove from heat and let cool. Remove cloves.
