1/2 Cup Pumpkin Flakes

1 Cup Heavy Cream

1/2 Cup Whole Milk

2 Tablespoons Maple Syrup

2 Tablespoons Maple Sugar Powder

1/2 Teaspoon Ginger Powder

1/2 Teaspoon Ground Nutmeg

1/2 Teaspoon Organic Ground Cinnamon

1/2 Teaspoon Salt

Directions

Preheat oven to 300°F and place rack in middle position.

Whisk eggs and Pumpkin Flakes until smooth. Add cream and milk, and whisk until creamy. Add maple syrup and Maple Sugar Powder, and whisk vigorously with remaining ingredients.

Pour custard into four 4-ounce ramekins or small cups. Arrange molded custards in 4-inch deep dish and place on rack in oven. Pour hot water into dish until it comes halfway up custard dishes.

Bake custard for 1 hour and 20 minutes. Remove from oven, let custard cool to room temperature in water, then cover with plastic and refrigerate for 4 or more hours.

Serve chilled, garnished with whipped cream.
