  1. Preheat oven to 400°F, and liberally rub 1-quart oven-safe dish with butter.

  2. Using knife, or preferably mandoline, slice potatoes into approximately 1/4-inch-thick slices. Shingle potatoes in prepared dish to create bottom layer.

  3. Sprinkle some salt and pepper over potatoes and scatter 4 to 5 pieces of Garlic Flakes over top. Repeat with remaining potatoes until all are sliced and pan is almost full.

  4. Slowly pour cream over potatoes and allow to settle before pouring more. Depending on exact size of dish, there will be slight variations on how much cream is needed. Dish should be full, with potatoes barely covered in cream.

  5. Allow cream to settle for about 10 minutes. Transfer to oven and bake for 1 hour, or until top is golden and bubbly. Pierce with fork to ensure tenderness.

  6. Let gratin cool for 10 to 15 minutes before serving.
