Porcini Rubbed Skirt Steak with Balsamic Onions

Ingredients

Makes 4 servings

  • 2 Pounds Skirt Steak, trimmed of silverskin

  • 1 Tablespoon Porcini Mushroom Rub

  • 2 Teaspoons Kosher Sea Salt Flakes

  • 1 Small Red Onion

  • 2 Teaspoons Olive Oil

  • 1 Cup Balsamic Vinegar

  • 2 Tablespoons Honey

  • 4 Thyme Sprigs, leaves only

  • 1 Garlic Clove, minced

Directions

  1. Rub skirt steak with 1 tablespoon Porcini Mushroom Rub and 1 teaspoon salt; set aside.

  2. Preheat grill or grill pan to high.

  3. Peel red onion but leave it whole, then slice rings 1/2-inch thick and sprinkle with olive oil and 1 teaspoon salt.

  4. Bring vinegar and honey to a boil in small pot, then reduce heat to a simmer.

  5. Place steaks and onion rings on grill. Grill onions until lightly charred, about 1 minute per side. Transfer onions to pot with vinegar. Grill steak until medium-rare, about 5 minutes per side.

  6. Turn heat up to medium high on vinegar onions, then add garlic and thyme leaves. Cook until vinegar is very thick.

  7. Serve steaks topped with vinegar onions.
