2 Pounds Skirt Steak, trimmed of silverskin

1 Tablespoon Porcini Mushroom Rub

2 Teaspoons Kosher Sea Salt Flakes

1 Small Red Onion

2 Teaspoons Olive Oil

1 Cup Balsamic Vinegar

2 Tablespoons Honey

4 Thyme Sprigs, leaves only

1 Garlic Clove, minced
Directions

Rub skirt steak with 1 tablespoon Porcini Mushroom Rub and 1 teaspoon salt; set aside.

Preheat grill or grill pan to high.

Peel red onion but leave it whole, then slice rings 1/2-inch thick and sprinkle with olive oil and 1 teaspoon salt.

Bring vinegar and honey to a boil in small pot, then reduce heat to a simmer.

Place steaks and onion rings on grill. Grill onions until lightly charred, about 1 minute per side. Transfer onions to pot with vinegar. Grill steak until medium-rare, about 5 minutes per side.

Turn heat up to medium high on vinegar onions, then add garlic and thyme leaves. Cook until vinegar is very thick.

Serve steaks topped with vinegar onions.
